1 cup whole wheat flour
1 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1 cup packed brown sugar
1 tsp vanilla extract
1/2 cup milk
1 cup chopped dates
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×5 inch loaf pan.
- Sift together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Stir in half of the flour mixture until just combined, then stir in half of the milk until just combined again. Repeat with the remaining flour mixture and milk until both are incorporated into the batter; do not overmix! Fold in dates last by hand with a rubber spatula or wooden spoon.
- Pour batter into prepared loaf pan; bake for 45-55 minutes or until a toothpick inserted into the center comes out clean (time will vary depending on your oven). Cool completely before slicing into 1-inch thick slices to serve as toast or snack bread with butter or jam spread on top!
